Today I traded posts with Cat, we decided to give you guys something different.

Cat is a 24 year old girl,Portuguese blogger living in London that writes about anything and everything.
I contacted her wanting to trade guest posts and we both agreed it would be a good idea to trade recipes.
So without further adieu here is Cat's special avocado recipe.



Avocado for Lunch


Ingredients:


  • 1/2 Ripe avocado
  • 1 fresh egg
  • Salt and pepper (at taste)
  •  Slice of Rye bread
  •  Mint and parsley (at taste)

Directions:


  1.  Start by preheating the oven to 250 degrees.
  2.  Take out about 2 tablespoons of flesh from the centre of your avocado, and save on a tiny plate.
  3.  Crack an egg inside of the avocado, making sure the egg white is covering the yolk.
  4. It’s time to bake for about 10 to 15 minutes. Keep an eye on the avocado as you don't want it too toasted.
  5. While we are waiting for the avocado to bake, start mashing the flesh you took in step 2. Toast the rye bread and spread the mashed avocado on top of the toast. Top it up with a sprinkle of salt and pepper.
  6. Take the avocado out of the oven and season it with cumins, salt and pepper, and hot sauce or soya sauce if you feel like it.

Avocado and egg: 224 cals, 7.5g protein, 16g fat, 14g carbs
Avocado on toast: 162 cals, 5g protein, 8g fat, 20g carbs
